The dumplings (gnocchi) are popular all over the world : a dish tasty and versatile , suitable for any condiment. This recipe expect a variant which is the fried dumplings will be accompanied by sun-dried tomatoes and spinach , releasing all the folklore of southern Italy !
Ingredients:
-1 Kg potatoes ;
-200 G flour ;
-10 Dried tomatoes ;
-100 Gr spinach ;
-1 Cup white wine ;
-1 Clove of garlic ;
- salt;
- oil for frying.
Preparation
Boil the potatoes. Peal and crush them with a potato masher.Incorporate the flour, salt, and work with the dough to make it uniform.Make a form of " sausages " of 1.5 cm in diameter, cutting of the pieces of dough at a distance of 2 cm from each other . We will get the dumplings by pressing on the tines of a fork.
In a pan heat the oil for frying : When it is hot , fry the dumplings a few at a time. Getting golden color on both sides and placing them on a paper towel. Chop the coarsely dried tomatoes, making them fry over high flame in a frying pan with a little oil and garlic. De-grease with white wine and lower the flame. Add the chopped spinach leaves. Mix them all pouring into the fried dumplings pan . Leave it for 2 minutes and serve hot.
