Risotto with nuts , saffron and bacon



If you want to impress your guests with an unusual flavor from the original first course try to make this risotto with walnuts , bacon and saffron and serve it along with a robust red wine such as Chianti .

Ingredients for four people:
250 g Carnaroli rice
200 g of white onions
300 g of vegetable broth
100 g bacon is cut in a single slice
50 g of chopped walnuts
One sachet of saffron
A glass of brandy
Olive oil
salt
pepper

Peel the onions and chop finely. Pour into a thick-bottomed pan a couple of tablespoons of olive oil and place on the stove over high heat . As soon as it is hot add the onion and sauté well. Combine the diced bacon , stir and after about five minutes, add the rice.
Toast the rice turning constantly with a wooden spoon, deglazing with brandy add five tablespoons of hot vegetable stock.
Cover the pan and cook over a low heat for about twenty minutes. Occasionally check the liquid and if it seems too little , add a ladle of broth.
As soon as the rice is cooked, turn off the heat and add the saffron and stir in the chopped nuts . Add salt and pepper according to your taste and bring to the table before it cools .

Muffins with pumpkin and walnut



Pumpkin Walnut Muffins are so easy to make  The aroma that wafts through the house while these are baking is incredible! . They are light because they do not plan to use butter and can be prepared very quickly and easily.

Ingredients for big 6 Muffins:
150 grams of flour
175 grams of sugar
200 grams of pumpkin
2 eggs
50 grams of walnuts clean
60 grams of oil
half a packet of yeast cakes
a few leaves of basil


Preparation:

Peel the pumpkin and cut into small cubes, leaving a few cubes of pumpkin for the final seal
Then coarsely chop the nuts. Then in a large bowl, mix the flour with yeast , sugar, eggs and oil. Stir the mixture well , preferably with a whisk. At the end add the diced pumpkin and walnuts , mixing a little ' . Pour the batter into the appropriate muffin cups, making sure that the mixture does not exceed three quarters of the stencil. Bake in oven at 180°C/350°F degrees for about 20 minutes , until muffins are firm and become golden color . Make sure a toothpick inserted in the center comes out clean! Cool in pans for 2 minutes, then remove to wire rack to cool, sprinkle with icing sugar and place in muffin cubes of pumpkin remained resting basil leaves for decoration. They are ready to be served.

Cheesecake Ingredients :

  • 200 G soft cheese ;
  • 150 Gr ricotta cheese ;
  • 75 Gr cream ;
  • 20 Grams yogurt ;

  •  lemon peel .


Ingredients raspberry sauce :

  • 200 Gr raspberries ;
  • 100 gr powdered sugar ;
  •  lemon juice.


Preparation:

Let's start with the brownies , mix eggs, sugar, melted chocolate and butter . Mix until dough is smooth . Finally, add the flour, vanilla and salt. Cover a baking tray with greaseproof paper and reverse the dough , level evenly and put aside .

Now the cheesecake :
 Mix all the ingredients so that they are perfectly blended. Now we're going to pour this mixture on the previous one (dough ) , being careful not to mix them ! Bake at 180 ° for 25 minutes.

Meanwhile, prepare the sauce by blending the raspberries with a mixer. Add the icing sugar and lemon juice.
Bring out the sweet and leave it to cool completely and garnish with raspberry sauce .Cut into squares and serve .

Serves : 8 people

Tortellini with Basil


Tortellini with Basil is a dish that wants to create a fine blend of the culinary tradition of the north and the south. They are classic tortellini Emilia revisited with a savory filling of ricotta cheese, sun-dried tomatoes and basil, traditional Mediterranean flavors.

Ingredients for two people.
The pasta(dough) tortellini :
100 grams of flour
1 egg
a pinch of salt .

The filling:
150 grams of cottage cheese
10 to 12 dried tomatoes
10 basil leaves
salt







Process
It is advisable to prepare the dough first , and while this rest, take care of the filling.
Chop tomatoes and basil. Combine the ricotta with a pinch of salt .
Preparing tortellini : roll the dough thin enough . Cut into squares of 4 cm . Place the center of each a bit ' of the filling. Combine the two vertices to create a triangle. Fold towards the tip that is the base of this triangle . Put tortellini on your index, with its tip pointing upwards and with the fold of the base, resting on your finger. With the other hand , connect the two extreme points of the base making them turn around your finger . And the tortellini is ready. Cook the tortellini for a few minutes in boiling salted water , drain and season with a little 'butter . Finally Serve with a few basil leaves to decorate .

American Donuts



Colorful and delicious , the " Donuts " American donuts are covered with colorful glazes . Prepare them at home is easy and fun.

Ingredients:


500 grams of flour ;
Brewer's yeast ;
70 grams of sugar ;
250 ml of milk ;
2 eggs ;
75 grams of butter ;
Vanilla ;
Oil for frying.



For the icing :

Hot water ;
Food coloring ;
20 grams of butter ;
200 grams of powdered sugar ;
Colored tails .

Dissolve the yeast with sugar and warm milk . And mix them by pouring the flour , eggs , vanilla , salt and finally the butter one at a time . Knead until the mixture becomes smooth .
Let it rise wrapped with transparent film for two hours , after with a rolling pin lay down the dough with a thickness of 1 cm . With pastry rings derive the circles, then we're going to "pierce " in the center , resulting in the characteristic shape of a donuts. Then let them rise for an ' hour.
For the icing , mix the melted butter , sugar and hot water : this is the basis from which to obtain the colored glazes , adding drops of colorant favorite shades .

Tiramisu Recipe

Most accounts of the origin of tiramisu date its invention to the 1960s in the region of Veneto, Italy , at the restaurant " el ToulĂ  " of Treviso. The legend says that the restaurant is located next to a closed house , serve the cake for , well, " pull up " the patrons .


Ingredients:

6 eggs ;
120 grams of sugar ;
500 grams of mascarpone ;(full-fat cream cheese)
400 grams of biscuits ;
5 cups of coffee ;
cocoa powder;
chocolate flakes.




preparation


Let's start by separating the egg whites from the yolks : In a bowl, add egg yolks with only half of the dose of sugar , Beat with an electric mixer until frothy . Add the mascarpone cheese and put aside .
Meanwhile beat the egg whites with the remaining amount of sugar . Once beaten  we will add them to the mixture gently previous mixture.
Now simply rest a spoon of this cream on the bottom of a glass tray . Bathe the ladyfingers in coffee and place into the pan to form the first layer .
Now put the cream over ladyfingers , and continue with additional layers until you finish the ingredients.
Well now level the last layer and complete with cocoa powder and chocolate chips to decorate .
Then place it in the fridge for a few hours and serve cold.

Ravioli with tomato sauce


Ravioli is a type of Italian pasta dish. It is usually two layers of pasta dough with a filling between the two layers. There are many different recipes, with different kinds of fillings. The most common fillings are meatvegetables or ricotta cheese.

Taste the ravioli with tomato sauce, especially in a day of celebration with the whole family , it is a great delight that it's nice to share with others. This dish is loved by both children and adults so that you will always  be manages to win the guests  despite being a quick and easy dish to prepare.

Ingredients for 4 people :

400 grams of ricotta and spinach ravioli or other stuffed
1 onion
200 grams of tomato pulp
30 grams of Parmesan cheese
3 small sprigs of basil
Extra virgin olive oil 
Pepper
Salt





Process

Preparation times are: 15 minutes for the sauce and the time indicated on the package for cooking ravioli.
After cleaning the onion , cut into slices and let it warm up in the pan when you put two tablespoons of extra virgin olive oil . When you need to add the onion fry the tomato , pepper and salt. Finally add the chopped basil that you have in hand and a little dilute ' the sauce with hot water . Then stir and simmer for fifteen minutes with low heat.
Meanwhile , heat a pot of water and when it boils , put the salt and the ravioli splurge . Cook them "al dente" , drain and place in the pan where the sauce .
Sprinkle with grated Parmesan cheese , stir and put the ravioli in a large serving pact . Cover them with the other sauce , put on top of a sprig of basil and serve at the table.

A little trick :
Use ready-made ravioli , but those with a delicate taste , possibly with a filling made with ricotta cheese and spinach.

Variants:
if you want a more savory taste , use the cheese in place of Parmesan cheese.
