White Pizza with smoked cheese and chicory

White Pizza with smoked cheese and chicory (Radicchio )

The white pizza with smoked cheese and radicchio is a delicious variation on the classic pizza or Focaccia (flat bread) white . It's pretty lightweight and suitable for an aperitif with a glass of Prosecco (sparkling wine).


Ingredients for the dough
500 grams of flour
brewer's yeast ( 1 cube )
1 tip of a spoon of sugar
1 pinch of salt.

Ingredients for the filling
1 radicchio (chicory)
1 scamorza smoked type (smoked cheese)
With 2 heaping tablespoons grated Parmesan cheese
salt, pepper and extra virgin olive oil

Process
Make the classic fountain with the flour and add the salt. Dissolve the yeast with the sugar in a bowl with warm water. Mix the flour until it forms a dough that is soft and  compact . Cover the dough and let rise for about two hours.
Meanwhile, cut the radicchio into small strips. Cut the smoked cheese squares rather small . Then place the radicchio in a bowl and season with olive oil, cheese, cheese cubes, salt and pepper. And turn on the oven.

Roll out the dough and filling it with radicchio that you have seasoned. Bake the pizza at a temperature of 200 ° C and leave until it is fully cooked . To give a more delicious touch  to the pizza you can add a few flakes of blue cheese( Gorgonzola) and some walnuts .
