Make an omelet of pasta

The omelet of pasta  preparation is tasty and very filling, ideal to consume on the day's outing or picnic.

Ingredients:

- 5 eggs;
- 50 gr grated Parmesan cheese;
- 100 gr smoked scamorza cheese;
- Chopped parsley;
- Pepper,
- Salt to taste.
- 50 GR bacon;
- 400 gr spaghetti boiled;
- Oil evo 

Let's start by cutting the smoked cheese into cubes, then break the eggs into a bowl, beating with a whisk. then add salt, pepper, cheese , bacon, smoked cheese and chopped parsley. Mix well .
Now add boiled spaghetti, stirring evenly all over the egg mixture and spaghetti.
In a pan, heat the oil; then pour the spaghetti leaving saute over medium heat for about ten minutes per side. To turn the omelet pasta can help with a lid.
Serve hot on a platter or cold for a outback lunch.
The omelet pasta lends itself to many variations, including the possibility of replacing the bacon with cooked ham, of salami or sausage. The smoked cheese may be substituted or mozzarella cheese, making it even more tasty !

The satisfaction of having a small vegitable garden on the balcony

Having a small garden on your balcony or in the garden at home can give you a great satisfaction. With a minimal effort, you can grow potatoes , tomatoes, beans and many other vegetables still without using any kind of pesticide or fertilizer. The products harvested shortly before their actual use  are kept intact their nutritional properties and they taste much better than those that are commonly found on the shelves of the market. Also do not contain harmful substances to the both those who consume them and to the environment. Each one can choose according to their needs what to sow in the space available.
Being able to make the tomato sauce with homemade tomato crops on your balcony is a great satisfaction as well as bring to the table fresh salads planted only a few weeks before.

Omelette with zucchini

Omelet with zucchini is a popular Italian typical dish. It is also good cold, and this is ideal to be consumed during a picnic in the open space. Let's look at how it is prepared.

Ingredients for 4 people:

- 4 Eggs;
- 500 Grams of zucchini , cut into cubes ;
- 4 Green onions ;
- 50 Grams of grated Grana Padano type ;
-  A few mint leaves , chopped ;
- Salt;
- pepper ;
- olive oil.




Preparation

Let's start by heating the olive oil in a pan. Add the cubed zucchini previously and  cook on medium heat for a few minutes, then lower the fires to it's minimum.
Meanwhile slam eggs with mint, salt, pepper and chopped spring onions . Mix and slam vigorously with the tines of a fork.
Add the mixture to the pan, stirring quickly zucchini, so they are distributed evenly in the omelet .
Let it cook over moderate heat until the bottom is entirely detached from the pan. With the help of a plate or lid, reverse the omelet so as to cook it also on the other side .
Serve hot or cold.

Cake with Berries

Cake with Berries


The cake with berries is a delicious and elegant dessert consists of a "basket" of fragrant pastry containing a delicious custard filling with berries .
Ingredients for the pastry:

- 120gr flour ;
- lemon - peel ;
-1 Egg ;
- vanillin ;
- 50 Grams powdered sugar ;
- 60 G butter .

Ingredients for the cream:

- 200 Ml milk;
- 3 Egg yolks ;
- 70 G sugar ;
- 20 Gr flour ;


- 500 Gr mix of strawberries , blackberries, blueberries , currants and raspberries.

First prepare the custard and leave it to cool. Then heat the milk in a saucepan , adding the sugar and the lemon zest. Then incorporate the egg yolks and then pour in the flour , stirring constantly without making lumps. Bring it to boil and thicken. Then add the berries.

Now prepare the pastry by mixing all the ingredients together , working it vigorously for a few minutes. Wrap the dough with a plastic wrap and let it rest in the refrigerator for a half an hour. 
Meanwhile butter and flour the tart mold. then cover with the pastry . Perforate with the tines of a fork and bake at 180 ° for 20 minutes. Take out of the oven the base and fill it with the custard with berries .
Decorate and garnish with some berries dusted with confectioner's sugar icing .

AN "INTERNATIONAL" BREAKFAST

French toast with bacon and caramelized banana with maple syrup

There is nothing better than starting the day with a hearty breakfast of french toast, accompanied by crispy bacon and caramelized banana with the luscious maple syrup!


Ingredients:


8 slices of bread for toast;
- 4 eggs;
- 300 ml of milk;
- A cup of sugar;
- Vanilla;
- 4 bananas;
- 100 gr of butter;
- 8 slices of bacon;
- Maple syrup.


Preparation

In a bowl beat eggs with the milk, vanilla and half cup of sugar.Soak each slice of bread  then laying them in a baking dish and let it sit for half an hour.Meanwhile slice the bananas and dissolve a portion of the butter in a large skillet . Pour the banana slices and jump over a high flame to sear . Add the remaining sugar, stirring carefully to caramelize evenly.
In a smaller pan toast slices of bacon, by melting fat and making them crispy.
Now we proceed by dissolving the remaining butter in another pan , fry the slices of french toast . toast them evenly on both sides.
Serve by placing on each slice of toast bacon and caramelized banana , finishing with a generous topping of maple syrup!

Grilled salmon with avocado and tomato pieces

Salmon is a fish with a particular taste : intense and decided that lends itself to countless variations , satisfying the most demanding palates . Today we will prepare grilled version , accompanied with tomato and avocado in a blend of traditional and exotic.


Ingredients:

500 gr of salmon (4 threads);
- 1 Ripe avocado ;
- 120 gr of tomatoes;
- Onion;
- Chopped cilantro; 
- 1 Clove of garlic;
- Olive oil;
- Salt q.s. ;

- Pepper to taste.

Preparation

Let's start by joining in a bowl diced tomatoes , chopped onion , a clove of minced garlic , coriander , salt and pepper and diced avocado . Mix with a little olive oil and let get the flavor .
heat a frying pan or a cast iron grill and in the meantime, sprinkle the salmon fillets with the remaining salt and pepper. When the pan is hot put the salmon fillets on both sides making them cook for 5 minutes or more , depending on your desire.

Serve the salmon in a serving dish, adding the sauce of tomatoes and avocado.

A freshly prepared dish, its easy to prepare and can be accompanied by a sparkling white wine.

Ravioli with cream and ham

Ravioli with Whipped cream and ham

Ingredients for 4 people:

80 gr. ham ;
20 gr. of butter ;
1 egg ;
400 gr. Fresh puff pastry ;
80 gr. minced meat ;
150 gr. grated Parmesan cheese ;
 Salt ;
Pepper ;
Nutmeg.

For the sauce:

200 ml of Pana(cream) ;
150 gr. ham ;
30 gr. of butter ;
Grated Parmesan cheese;
Nutmeg ;
Salt ;
Pepper.

To prepare the filling for ravioli, chopped ham, and put to fry in butter , along with the minced meat . After, go all in a blender, then combining the salt, pepper, nutmeg , Parmesan and egg, and put everything in a blender until mixture is smooth. Roll out the dough (about 0.6 mm thick ) , cut it into squares not very large , put the filling in each loop, cover with another layer of dough and cut into squares using a wheel.
At this point you can prepare the sauce: in a saucepan , put the butter to melt , and when melted, sauté the diced ham. Then , add the cream , pepper and nutmeg. Add salt and cook the ravioli , and then sauté in the pan with the sauce. Complete with a sprinkling of grated Parmesan cheese .

White Pizza with smoked cheese and chicory

White Pizza with smoked cheese and chicory (Radicchio )

The white pizza with smoked cheese and radicchio is a delicious variation on the classic pizza or Focaccia (flat bread) white . It's pretty lightweight and suitable for an aperitif with a glass of Prosecco (sparkling wine).


Ingredients for the dough
500 grams of flour
brewer's yeast ( 1 cube )
1 tip of a spoon of sugar
1 pinch of salt.

Ingredients for the filling
1 radicchio (chicory)
1 scamorza smoked type (smoked cheese)
With 2 heaping tablespoons grated Parmesan cheese
salt, pepper and extra virgin olive oil

Process
Make the classic fountain with the flour and add the salt. Dissolve the yeast with the sugar in a bowl with warm water. Mix the flour until it forms a dough that is soft and  compact . Cover the dough and let rise for about two hours.
Meanwhile, cut the radicchio into small strips. Cut the smoked cheese squares rather small . Then place the radicchio in a bowl and season with olive oil, cheese, cheese cubes, salt and pepper. And turn on the oven.

Roll out the dough and filling it with radicchio that you have seasoned. Bake the pizza at a temperature of 200 ° C and leave until it is fully cooked . To give a more delicious touch  to the pizza you can add a few flakes of blue cheese( Gorgonzola) and some walnuts .

Fried dumplings with dried tomatoes and spinach

The dumplings (gnocchi) are popular all over the world : a dish tasty and versatile , suitable for any condiment. This recipe expect a variant  which is the fried dumplings will be accompanied by sun-dried tomatoes and spinach , releasing all the folklore of southern Italy !


Ingredients:
-1 Kg potatoes ;
-200 G flour ;
-10 Dried tomatoes ;
-100 Gr spinach ;
-1 Cup white wine ;
-1 Clove of garlic ;
- salt;
- oil for frying.








Preparation

Boil the potatoes. Peal and crush them with a potato masher.Incorporate the flour, salt, and work with the dough to make it uniform.
 Make a form of " sausages " of 1.5 cm in diameter, cutting of the pieces of dough at a distance of 2 cm from each other . We will get the dumplings by pressing on the tines of a fork.
In a pan heat the oil for frying : When it is hot , fry the dumplings a few at a time. Getting golden color on both sides and placing them on a paper towel. Chop the coarsely dried tomatoes, making them fry over high flame in a frying pan with a little oil and garlic. De-grease with white wine and lower the flame. Add the chopped spinach leaves.  Mix them all pouring into the fried dumplings pan  . Leave it for 2 minutes and serve hot.

Fried Chicken with Potatoes and Vegetables 

The fried chicken with french fries and vegetables certainly not a dish for those on a diet, but if it has a delicious flavor which is hard to give up. 
It can be served as a second dish in small portions or may be brought to the table as a main dish accompanied with some slice of bread. Abound with vegetables and be more sparing with the fried potatoes.
Typically this dish pleases young and old but not cucinatelo too often.. Now known that fried is not as healthy but once in a while is good because it causes the liver to work and prevents get lazy too. 
The extra virgin olive oil is quite expensive and use it for frying can be prohibitive, but use it for the realization of this dish means to obtain a finished product of the highest quality and a lot healthier.

Il pollo fritto con patate fritte e verdure non certo un piatto per chi è a dieta ma se ha un sapore delizioso al quale è difficile rinunciare.
Può essere servito come secondo piatto in porzioni ridotte oppure può essere proposto in tavola come piatto unico accompagnato con qualche fetta di pane. Abbondate con le verdure e siate più parsimoniosi con le patate fritte se non desiderate consumare un piatto troppo calorico.
In genere questo piatto piace a grandi e piccini ma non cucinatelo troppo spesso. Oramai risaputo che il fritto non sia così salutare ma di tanto in tanto fa bene perché induce il fegato a lavorare ed evita che si impigrisca troppo.
L’olio extravergine d’oliva è piuttosto costoso e utilizzarlo per friggere può essere proibitivo ma adoperarlo per la realizzazione di questo piatto significa ottenere un prodotto finito di prima qualità e molto più salutare.
