Omelette with zucchini

Omelet with zucchini is a popular Italian typical dish. It is also good cold, and this is ideal to be consumed during a picnic in the open space. Let's look at how it is prepared.

Ingredients for 4 people:

- 4 Eggs;
- 500 Grams of zucchini , cut into cubes ;
- 4 Green onions ;
- 50 Grams of grated Grana Padano type ;
-  A few mint leaves , chopped ;
- Salt;
- pepper ;
- olive oil.




Preparation

Let's start by heating the olive oil in a pan. Add the cubed zucchini previously and  cook on medium heat for a few minutes, then lower the fires to it's minimum.
Meanwhile slam eggs with mint, salt, pepper and chopped spring onions . Mix and slam vigorously with the tines of a fork.
Add the mixture to the pan, stirring quickly zucchini, so they are distributed evenly in the omelet .
Let it cook over moderate heat until the bottom is entirely detached from the pan. With the help of a plate or lid, reverse the omelet so as to cook it also on the other side .
Serve hot or cold.
