Ratatouille



Ratatouille


The French ratatouille can be served as a dish in its own right , accompanied by rice , potatoes , or plain bread. Most of the time it is commonly served as a side dish .
To do justice to this recipe is definitely the mouse Remy in Pixar movie "Ratatouille ."

  • ingredients

  • 2-3 cloves garlic
  • 2 bay leaves
  • 2 white onions
  • Eggplant 2 long and narrow
  • 1 green bell peppers , 1 red
  • Tomatoes 500 gr.
  • 2 zucchini long and narrow
  • salt
  • Pepper 6 tablespoons extra virgin olive oil
  • Basil for garnish

Wash and cut the vegetables into slices , remove as much as possible from the white zucchini, eggplant and peppers.
Put the tomatoes in boiling water and peppers , peel them . Boil the vegetables , each for its own account in order not to mix the flavors. In a pan with three tablespoons of oil put onions and cook them . Add the peppers . When they are almost cooked , add the tomatoes , thyme , bay leaf, salt, pepper and minced garlic . Simmer for 40 minutes.
In another pan , put three tablespoons of olive oil to cook the eggplant , then add the zucchini and let go for 15 minutes
Stir the vegetables and garnish with basil. You can eat it hot or cold.
